How to safely store sweet potatoes
Sweet potatoes harvested from the roots of the crop, fresh potatoes, large volume, high moisture content, young tissue, thin skin easily damaged, susceptible to cold damage and infection and rot. Sweet potato still has vigorous breathing during storage, its breathing intensity is ten to ten times larger than that of cereal seeds, and sweet potatoes undergo aerobic respiration when there is sufficient oxygen, and more oxygen is inhaled, and more carbon dioxide and heat are released. When oxygen is insufficient, sweet potatoes undergo anaerobic respiration, producing alcohol, carbon dioxide, and a small amount of calories. Alcohol has a harmful effect on potato blocks and can easily cause a rotten cellar. The requirements for safe storage are: the optimum temperature is 10 to 14°C, the humidity is 80 to 95%, and the oxygen and carbon dioxide in the air are 15% and 5%, respectively. When sweet potatoes are harvested, they should be dug, lightly transported, and gently put. Remove diseased, insect bite, damaged, flooded tubers and store them in the storage place of sweet potatoes for 3-4 days before entering the pit. The storage method is generally using a cellar pit: digging outdoors, 2 meters deep and 1.5 meters wide, the length of which depends on the storage capacity.
