From the perspective of the domestic market, with the rapid economic development and the continuous improvement of people's living standards, the demand for dehydrated vegetables is gradually expanding, and the development prospects are very broad. Therefore, the development of dehydrated cowpea processing is a lucrative industry with more growth potential. The technical process of cowpea dehydration processing is: raw material harvesting → pretreatment (impurity removal, cleaning, de-heading, cutting, etc.) → blanching → cooling → dehydration → uniform moistening → secondary dehydration → post-processing (sorting, packaging, storage, etc.). Among them, the blanching and dehydration process is the key to the whole process, and it is the core to ensure the quality of dehydrated cowpea products.
